"Anpo persimmon cheesecake"

A limited edition cheesecake that makes use of Anpogaki, which is made from Sanjagaki, a specialty of Nanto City, Toyama Prefecture.

By combining juicy and moderately sticky Anpo persimmons with a smooth cheesecake made with plenty of fresh cream, we brought out the contrast in texture. Also, the strong sweetness of Anpo persimmons, which you wouldn't expect to have been perfected by nature, is achieved through the use of plenty of sour cream and a small amount of miso to bring out the sourness and saltiness to the fullest.

The persimmons used in Anpogaki cheesecake are dried persimmons called `` Sanjagaki,' ' which are produced only in the Fukumitsu region, and astringent persimmons used in Anpogaki.

Among the astringent persimmons, it is one of the largest, with the largest ones measuring 10cm in diameter and weighing up to 400g. Although this variety contains a lot of tannin, which is an astringent ingredient, it actually has a sugar content of over 18% and is characterized by its tight pulp.
